Green Pu-Erh is a Pu-erh teathat is uncooked and undergoes little or no oxidation and is more usually compressed into forms for aging.
Processing
Once the tea is collected, usually from old trees, they are sorted to remove any broken or already oxidised leaves. Afterwards they are heated to remove up to 90% of their moisture and then withered in the sun of mechanically. The leaves are then graded and finally the leaves are steamed into shapes. Some leaves that may have broken off the tea bricks or cakes may be sold off as loose Green Pu-Erh, but this is rare. The tea is then aged in a dry environment.
Tasting and brewing
Yunnan teas are best brewed with porcelainor yixingteaware using freshly boiled water at 90°C (194°F) to 100°C (212°F), and are suitable for multiple infusions.
