Sulforaphane
Sulforaphane is an anticancercompound found in broccoli. In the plant, it is present in bound form as glucoraphanin, a glucosinolate. Sulforaphane is formed from glucoraphanin on plant cell damage (by boiling or consumption) via an enzymaticreaction.
The anticancer activity of sulforaphane lies in the induction of phase-II enzymes of xenobiotic transformation (such as quinone reductaseand glutathione S-transferase).
